A holiday favorite, cranberries are harvested in the fall and abundant this time of year. One way I like to enjoy their antioxidant punch is in an unsweetened juice. Simple to make and great on its own or mixed with soda water or a cocktail, you’ll be sure to find many uses for this juice this season.
1 12 oz package of cranberries
4 cups of water
Wash and drain cranberries. Bring cranberries and water to boil over medium heat. Reduce heat to simmer and allow cranberries to steep for around 25 minutes or until all cranberries have burst. Strain juice through a fine strainer into a bowl, allowing solids to drip into the bowl for at least a half hour; do not press solids, this will make your juice cloudy. Pour juice into an appropriately sized jar or container and cool. Enjoy your cranberry juice!
